With Easter almost here, you may be in search of easy family recipes to keep the kiddos occupied during this holiday celebration. Well search no more, in this blog we will discuss how to make three easy Easter themed cupcakes.
The great part about these recipes is it can be utilized not only for Easter but for any festive spring activities you may want to create. Let’s think about what child doesn’t love cupcakes, frosting, marshmallows, and jelly beans.
We will be making the following cupcakes:
- Bunny Rabbit Cupcakes
- Little Lamb Cupcakes
- Easter Peep Garden Cupcakes

No modifications are needed. Using baking cups for each section of the muffin tin, place batter halfway full in a muffin tin and bake for 15-20 minutes on 350 degrees.
Take cupcakes out oven and place on baking rakes to cool be sure cupcakes are completely cool before frosting. Gently, frost each cupcake and set aside. Each cake recipe makes about 24 standard cupcakes.
The cooled cupcakes will be your base for each cupcake themed design. Here is what you will need:
DECORATIONS
- Large marshmallows- 1 per Bunny cupcake
- Mini marshmallows 13-15 per Little Lamb cupcake
- Pink sugar crystals
- Mini M&M’s (for eyes)
- Small pink jelly beans
- Spring colors sprinkles
- Peeps Marshmallows
- Chocolate frosting
OTHER SUPPLIES
- Wilton piping tip #223 or #22 (optional)
- 12 inch piping bag- 3
- Small offset spatula
- Scissors – (food safe)
- Tweezers (optional)
To begin we will start with the bunny rabbit. After the cupcakes are baked and before you begin frosting the cupcakes, you’ll need to prepare the marshmallow ears for the bunnies. You can create the bunny ears with marshmallows. Simply cut each marshmallow diagonally and add sprinkles. Yep, that easy!
So, let break it down:
For the Bunny Rabbit
- Generously frost each cupcake and set aside.
- Pour the sugar crystals into a shallow bowl or paper plate and set side.
- Take one marshmallow at a time and snip diagonally using the kitchen scissors.
- Dip the sticky side into the pink sugar crystals and place standing up on the cupcake – gently press into the frosting and repeat with the other ear.
- Repeat with all the marshmallows giving each cupcake a pair of bunny ears.
- Insert one jelly bean into each frosting mound to create noses. Use your hands or a clean tweezers to place M&M’s to create eyes, or you can use chocolate frosting.
Little Lamb Cupcakes
- Pipe eyes using chocolate frosting and mouth shapes onto center surface of each cupcake.
- Place jelly bean half above mouth to resemble nose.
- Top with mini marshmallows
- Take mini marshmallows one at a time and snip diagonally using kitchen scissors
- Dip the sticky side into the pink sugar crystals and place standing up on the cupcake at two sides so, the pointed ends resemble ears.
- Cover remaining edge of cupcake with mini marshmallows
Easter Peeps Garden Cupcake
- Place Using Wilton’s grass tip 233 or Star tip 22 in piping bag. If you do not have this tip, not to worry you can also place three cuts into the bottom of your piping bag before placing the buttercream. The cuts will create slits in the buttercream to resemble grass.
- Color frosting green and place in piping bag.
- Working in a circular motion create little puffs that resemble grass. Start on the outside of the cupcake and work quickly creating little puff to resemble grass until the entire cupcake is covered
- Place Peep in the center
- Garnish with sprinkles to resemble flowers and you can add jelly bean shaped eggs, if you like.
